The authors find that consumers process nutrition information differently depending on which and how many claims are displayed and that consumers prefer products labeled with a single claim overall. Quoted in Business Insider, Keisel says "Our most important result reported here is that voluntary nutrition front of package or shelf labels may not be a panacea when trying to inform consumers about healthier food options."
